Many people ask what sustainable gastronomy is. Sustainable gastronomy involves preparing and consuming food in a way that meets the needs of the present without compromising those of future generations, according to the United Nations. According to the United Nations, this includes protecting the environment and ensuring social and economic equity.the food industry is one of the most polluting industries, causing serious problems such as food waste, deforestation, packaging pollution, gas emissions from industrial livestock, animal abuse, labor exploitation and the generation of chronic diseases. Sustainable gastronomy seeks to change this, offering healthier food for people, friendlier for the planet and more responsible towards society.

How do we do it? By offering nutritious food to our diners, ensuring that the inputs do not come from companies that exploit people or pollute the environment, paying our employees fairly and not exceeding working hours. We also offer inclusive food for all people, including those with health restrictions.
That is what we do at Limaná and we hope that more Peruvian restaurants will join us in this effort.
