Healthy recipe: Banana Cake

As a psychologist and health coach, I have always been interested in the connection between nutrition and psychology. How our diet affects both our physical and mental health is a fundamental issue for me.

I have always loved to cook, and as a result of the courses I have taken, I have learned how important it is to lead a balanced and healthy life. That's why, in addition to preparing the traditional desserts that I enjoy so much, I have started to create recipes that are healthy and delicious. When I feel cravings for something sweet, I love to prepare desserts that, besides soothing my craving for something tasty, allow me to take care of my health.

I share with you this delicious, healthy and very easy to make recipe: banana keke without gluten and refined sugar, I hope you enjoy it as much as I do!

Ingredients:
- 3 ripe bananas, mashed (the riper, the better).
- 3 eggs.
- 1/3 cup coconut oil.
- 1 cup Greek yogurt.
- 1/4 cup maple syrup.
- 1/4 cup coconut sugar.
- 1 teaspoon vanilla.
- 1 cup gluten-free oat flour.
- 3/4 cup almond flour.
- 1/2 teaspoon baking soda.
- 1/2 teaspoon baking powder.
- Pinch of salt.
- 1/2 cup shredded coconut (optional; you can substitute cocoa nibs, chocolate chips, nuts, etc.).

Preparation:
1. In a bowl, mix dry ingredients well: oat flour, almond flour, baking powder and salt.
2.In another bowl, combine the mashed bananas with the coconut oil, coconut sugar and maple syrup.
3. Then, add the eggs one by one, making sure to integrate them well, and finally, add the vanilla.
4. In a third bowl, mix the Greek yogurt with the baking soda (this will make it fluffy).
5. Add the yogurt mixture to the wet ingredients, alternating with the flour mixture.
6. Stir well until a homogeneous dough is obtained.
7. When the ingredients are completely integrated, incorporate the grated coconut and mix again.
8. Pour the batter into a rectangular mold suitable for high temperatures and bake (preheated oven) at 170 degrees for 45-50 minutes.
9. Once ready, let it cool, unmold it and enjoy!
